CITRIC ACID AND IT'S USES IN FOOD INDUSTRY

Citric acid is a versatile organic acid with broad applications as a flavoring and preservative in the food and beverage industry, a pH adjuster and chelating agent in pharmaceuticals and cosmetics, and an effective cleaning and descaling agent in household products. It acts as an acidulant to provide a sour taste, enhances fruit flavors, prevents oxidation, and inhibits microbial growth, thereby extending shelf life. In cleaning, its ability to chelate metal ions helps remove limescale, soap scum, and rust.

It adds a sour, tangy, and fruity taste to products like soft drinks, candies, jams, and desserts. 

·         Preservative:

By lowering the pH of foods, it inhibits the growth of bacteria and molds, extending shelf life.

It prevents oxidation, which can cause loss of flavor and color in food products.
